Buttermilk Grilled Chicken

(Adapted from She Wears Many Hats)

Ingredients:

  • 1 1/2 cups buttermilk
  • 1 TBL dried Italian seasoning
  • 1 TBL garlic powder
  • 2 teaspoons kosher salt
  • 2 dried bay leaves
  • 3 pounds bone-in chicken pieces

Directions:

  1. In a 4-cup measuring cup or small bowl, whisk together buttermilk, Italian seasoning, garlic powder, and salt.
  2. Place chicken pieces into a 1-gallon re-closable plastic bag. Pour buttermilk mixture and the bay leaves into the bag and seal the bag.
  3. Refrigerate for at least 2 hours or overnight, turning occasionally. (It’s better if you marinate overnight!)
  4. Remove chicken from the refrigerator 30 minutes before grilling.
  5. Heat grill to medium-low. Place marinated chicken on the grill, (discard extra marinade) cover and cook, turning occasionally, until golden brown and cooked to an internal temperature of 165 degrees, about 30-40 minutes.
  6. OR, bake in a 450-degree oven for about 30 minutes.
