Cranberry-Apricot Chicken


Ingredients:

  • 1.5 cups low sodium chicken broth
  • 2 tsp. grated orange peel
  • 1/4 cup dry white wine
  • 1/2 cup slivered dried apricots
  • 1/3 cup dried cranberries
  • 1/2 cup fresh orange juice
  • 1/2 cup Cranberry Juice
  • 4 boneless, skinless chicken breasts
  • 2 tsp. cornstarch mixed w/ 2 Tbsp. water
  • Garnish: green onions and slivered orange peel


Directions:

In a large frying pan, combine broth, grated orange peel, orange juice, wine, apricots, dried cranberries, orange juice and cranberry juice. Add the chicken to this mixture, cover and bring to a boil. Reduce heat to simmer until the thickest part (the middle usually) of the chicken is no longer pink. (15-20 minutes). Transfer chicken to a platter and cover to keep warm.

Bring the liquid in the pan back to a boil, uncovered so you can let it reduce down to about 1 cup. (About 3 minutes). Next stir in the cornstarch mixture and whisk until thickened. (Season to taste with salt and pepper if desired).

Spoon some of the sauce over the chicken and pour remaining sauce into a bowl. Garnish with green onions and slivered orange peel if desired.


Pot Pie Pasta Casserole


Ingredients:

  • 1 lb. egg noodles
  • 1 precooked rotisserie chicken, shredded
  • 2 1/2 cups frozen peas/carrots/green beans
  • 1 can cream of chicken
  • 1 can cream of mushroom
  • 1 cup cottage cheese
  • 1/4 cup low-fat milk
  • 1/2 white onion, diced
  • 1 cup pasta water
  • pepper and red pepper chili flakes


Directions:

  1. Preheat oven to 350 degrees F. Spray a 13x9 inch baking dish with PAM, set aside.
  2. Bring a large pot of water to boil for the egg noodles. Cook according to package. Reserve 1 cup of pasta water when finished.
  3. Cut/shred all of the chicken from the rotisserie chicken. I probably had ~3 cups shredded chicken when I was done shredding mine. Set chicken aside.
  4. In a large bowl combine all of the ingredients: noodles, chicken, cream of mushroom, cream of chicken, cottage cheese, milk, veggies, onion, pasta water and seasonings. Mix well and pour into the prepared baking dish.
  5. Loosely cover with foil and place in oven. Cook for 25 minutes covered and the last 5-10 minutes cook with foil removed.



High Protein Cheerio Trail Mix


Ingredients:

  • 1/3 cup Cranberries, dried
  • 1/3 cup Golden raisins
  • 1/4 cup Honey
  • 1/4 cup Nut butter of your preference
  • 1/2 cup Cashews
  • 3 cups Cheerios, plain or honey nut
  • 1/4 cup Pepitas
  • 1/4 cup Walnuts
  • 1/4 cup Butter, unsalted


Directions:

  1. In a large bowl, mix cranberries, golden raisins, cashews, Cheerios, pepitas and walnuts together.
  2. In a small sauce pan over medium heat, melt the peanut butter, honey and butter together. Pour over Cheerio mixture and stir to combine.
  3. Store in fridge for 2 hours before consuming.


No Sugar Added Homemade Applesauce


Ingredients:

  • 3 lbs of your favorite apples (I used Pink Lady)
  • 1 tsp. cinnamon
  • 1/2 tsp. All Spice
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • Juice of 1 fresh lemon
  • 1 cup water
  • 1/4 cup fresh OJ
  • 1/2 tsp. vanilla extract
  • garnish: cinnamon sticks


Directions:

  1. Peel and core all of the apples and cut each apple into 8 slices. Place in a large pot on stove and add in all of the remaining ingredients.
  2. I like to cook my applesauce with some of the cinnamon sticks in it as well. Remove before consuming. Cook on low-medium heat until apples break down, ~30-45 minutes. Be sure to stir occasionally. I like my apple sauce a little on the chunky side...however if you have an immersion blender you may use that to create a more smooth consistency.
  3. Enjoy cooled down or warm! Store in fridge.
