Classic Caprese Salad drizzled with Enzo Basil Crush Olive Oil


Ingredients:

  • 3 tomatoes, ¼ inch slices
  • 1 lb. fresh mozzarella, ¼ inch slices
  • 20-30 basil leaves
  • ENZO Extra Virgin Olive Oil
  • Salt & pepper


Instructions:

  • Layer alternating slices of the tomato and mozzarella, adding a basil leaf in between each
  • Drizzle with ENZO Extra Virgin Olive Oil and season with salt and pepper (to taste)


Nectarine and Tomato Salad drizzled with Enzo Medium Extra Virgin Olive Oil


Ingredients:

  • 3 nectarines
  • 3 tomatoes
  • ¼ cup crumbled feta
  • ½ red inion
  • ¼ cup chopped almonds
  • ¼ fresh mint
  • ¼ fresh basil
  • ENZO Medium Extra Virgin Olive Oil
  • Salt


Instructions:

  • Slice the nectarines and tomatoes into wedges and place on platter
  • Slice the red onions into thin strips and chop the almonds
  • Top the platter with the crumbled feta, almonds, onions, fresh mint and fresh basil
  • For dressing, drizzle with ENZO Extra Virgin Olive Oil and sprinkle with salt


Homemade Granola using Enzo Medium Extra Virgin Olive Oil


Ingredients:

  • 4 cups rolled oats
  • 2 cup unsweetened coconut
  • 2 cup slivered almonds
  • 1 cup cashews
  • ¾ cup ENZO Extra Virgin Olive Oil
  • ½ cup honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 cups of your favorite dried fruit (optional)


Instructions:

  • Preheat the oven to 325 degrees Fahrenheit
  • Combine the oats, coconut, almonds, cashews, olive oil, honey, cinnamon and salt together in a large bowl
  • Toss the ingredients to coat and spread evenly on a baking sheet
  • Bake until golden brown for approximately 30 minutes. Let the mixture cool completely on the baking sheet
  • Once the granola is ready to serve, add the dried fruit and toss to combine


Instructions:

  • Scoop the ice cream into a bowl
  • Top the ice cream with the granola, ENZO Olive Oil and sea salt
