Great Day Kitchen, 4/25/17 - Taco Boat/Chicken Wrap
Registered dietitian nutritionist for Clovis Unified School District and krollskorner.com, Tawnie Kroll, visited the Great Day Kitchen to prepare some delicious food.
Taco Boat/Taco Salad
- 2 lbs taco meat (pre-seasoned)
- 15 tostada bowls
- 15 ounces of cheese
- 10 ounces shredded lettuce
Cook taco meat, and assemble boats: meat, lettuce, and top with cheese.
Chicken Cool Ranch wrap w/ Bacon
- 2 lbs. grilled chicken, cut into strips
- 7 oz. shredded cheese blend
- 7 ounces shredded lettuce
- 1/2 cup Ranch dressing
- 15 whole wheat tortillas
- 7 ounces bacon crumbles
Spread approx. 1 tsp ranch dressing on 10" tortilla, leaving about 1 inch edge. Cover with shredded lettuce (1/2 cup). Top with chicken strips (3 oz) and 1/2 oz precooked bacon crumbles. Top with with shredded cheese (1/2 oz). Wrap or roll.
