Great Day Kitchen, 1/25/18 - Fish Fry and Pineapple Coleslaw

Fried Fish


Ingredients:

  • 4 Filets of Basa or Catfish
  • 4 Eggs ( whisked in medium bowl)
  • 4 cups of yellow cornmeal
  • 1/2 Cup of all purpose flour
  • 1/2 Cup of paprika
  • 1/2 Cup of dry parsley
  • 1/2 Cup of black pepper
  • 1/2 Cup of garlic powder
  • 1/2 Cup of onion powder
  • 1/2 Cup of salt


Directions:

  • Add all the Dry Ingredients in a gallon ziplock bag.
  • Shake the ingredients well.
  • Take your filets one at a time and wash them in the bowl of whisked eggs.
  • Take the fish out of the eggs, while putting them in the ziplock bag of seasoned cornmeal.
  • Shake it until completely covered in the dry mixture.
  • Deep Fryer must be set at 375° temperature before you drop them in oil. If you must use a lower temp, 365° will work.
  • Fry your fish until golden brown.


Pineapple Coleslaw


Ingredients:

  • 2 bags of coleslaw, shredded
  • 2 tsp of apple cider vinegar
  • 1/2 cup of mayonnaise
  • 2 pinches of salt
  • 1 can of Dole chunk pineapple, drained
  • 3/4 cup of raisins or craisins


Directions:

  • In a large bowl, mix all ingredients together and fold the pre-bagged shredded cabbage into the mixture.
  • You may cut the chunks of pineapple in half if you wish.
  • Refrigerate to marinate.


Steak Fries Topped with Chipotle Mayo


Ingredients:

  • 1 bag of frozen steak fries.
  • Salt
  • Cup of mayonnaise
  • 1 tsp of chipotle powder
  • 1/2 a lemon squeezed


Directions:

  • Take the mayo, lemon juice, and chipotle powder and mix it all together.
  • Deep fry the steak fries and when finished sprinkle salt for your taste.
  • You may drizzle the chipotle mayo over fries and fish if you'd like, or enjoy on the side for dipping sauce.
