Jambalaya



  • 1 lb. diced chicken
  • 1 lb. hot Italian sausage, chopped
  • 4 oz. ham, chopped
  • 3 oz. white onion, diced
  • 3 oz. green bell peppers, diced
  • 3 oz. celery, diced
  • 1.5 cups canned crushed tomatoes
  • 1 cup chicken stock
  • 1/2 tsp. cumin
  • 1 tsp. Cajun seasoning
  • 1/4 tsp. granulated garlic
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. olive oil
  • 1 tsp. butter
  • 1 Tbsp. flour


Combine butter, olive oil and flour in a large pot to make the roux. Add in onions, peppers, celery, chicken and sausage - saute for 10 minutes. Add in tomatoes, chicken stock, all spices and let this some to a boil, then simmer for 30 minutes. Serve over brown rice and with a freshly baked dinner roll.


Mac and Cheese with Ham



  • 1 lb Land O lakes reduced sodium cheese sauce
  • 1 lb chopped (cubed) ham
  • 1/3 cup Producers milk
  • 7 oz small pasta shells
  • 1 3/4 cup water


Chicken Chili



  • 1 lb diced chicken
  • 2 cups pinto beans
  • 1.5 cups crushed tomatoes
  • 1/4 cup tomato paste
  • 3 Tbsp. taco seasoning
  • 1/2 tsp. chili powder
  • 6 oz. shredded cheddar cheese
  • 2 oz. diced green chilies


Mix all ingredients together in a large pot, bring to a boil, then simmer for 20 minutes.


Turkey Gravy



We use turkey gravy from JennieO and serve with mashed potatoes and a homemade bread roll.

  • This recipe would serve 8:
  • 2 lbs turkey gravy
  • 4 cups mashed potatoes
  • 8 dinner rolls
