Salmon Poke


Poke Sauce:

  • 1 cup soy sauce
  • 1 cup may ploy
  • ¼ cup sesame oil
  • 1 cup rice wine vin
  • ¼ cup tablespoons Sambal
  • ½ cup lime juice
  • 2 tablespoons black pepper
  • 1 cup chopped cilantro and green onion
  • 5 each basil leaves


Place all ingredients to blender and pulse on low blender setting until finely chopped. Pour mixture into bottles and store in a cool area.

Avocado Puree:


  • 8 whole avocados
  • ½ cups lime juice
  • ¼ cup water
  • ½ cup cilantro
  • 3 tablespoons salt
  • Dash of ultra tex 3


Add all ingredients to the blender and blend on high, until smooth even consistency. If lumps remain strain puree to remove debris.


Vegetables Preparation:


  • Small dice on cucumber
  • Defrost edamame
  • Mince jalapeno
  • Chopped green onions and cilantro


Salmon Preparation:


Small dice on salmon, no larger than ½ inch dice. Serving size is 4 ounces.


Wonton Preparation:


Deep fry in high temp fryer until golden brown. Be sure to fry small batch so wontons do not stick to each other.


Sriracha Mayo:

2 gals of mayo

½ bottle of sriracha

Mix together in a large mixing bowl
