Chef Soupy's TM Burgers and Bacon Wrapped Fish and Chips

Chef Soupy, from Table Mountain Casino in Friant, visited Great Day to prepare some delicious dishes.

TM Burgers


  • 1 beef patty
  • 2 slices red onion
  • 2 slices tomato
  • 2 crisp lettuce leaves
  • ¼ sliced avocado
  • 2 slices of cooked bacon
  • 1 ounce of fried onion strings
  • 2 slices of cheese (Swiss or Provolone)
  • 2 each pickle chips or spears
  • 1 burger bun


  • 1 oz. mayonnaise
  • 1 oz. ketchup
  • 1 oz. mustard
  • 1 oz. chopped sweet relish
  • 1 oz. Worcestershire
  • splash of Tabasco sauce
  • 2 tablespoons vinegar
  • pinch of sugar
  • pinch of salt and pepper


  • For the burger, cook in a hot skillet to your desired temperature, (2-3 minutes on both sides for medium to medium rare or 5-7 min for well-done.) Melt the cheese on the patty. Build the burger to your taste (lettuce, red onions, tomatoes, bacon and whatever you desire.) Yield: one serving.
  • For the dressing, combine all the ingredients and mix until completely smooth. Spread onto bun and/or burger as desired.

Bacon Wrapped Fish and Chips


  • 2 slices of bacon
  • 2-4oz. cod fish strip
  • 1 cup of flour
  • 6 oz. of white wine
  • pinch of salt and pepper
  • pinch of blacken seasoning


  • 1 oz. mayonnaise
  • 2 tablespoons Tabasco sauce
  • pinch sugar
  • chopped dill pickles
  • 1 oz. of vinegar
  • pinch of salt and pepper
  • 1 tablespoon of lemon juice
  • pinch of chopped parsley


  • In a large bowl, pour in 6 oz. of wine. Sift 1 1/2 cups flour into the bowl, whisking in gently until combined, then stir in seasoning. Pat fish dry and season on both sides with salt and pepper, wrap the fish with the bacon and coat the fish in the batter. Fry fish, turning over frequently, until deep golden brown, approximately 4 to 5 minutes.
  • Serve with wedge fries and sauce on the side.
