In this segment of Farm To Fork, we talk about tomatoes.

When you talk about tomatoes, most people think about the tomato in your salad or on your hamburger, but there are a lot more varieties from the Central Valley used in processing.

Bersey is growing tomatoes that will be used in tomato paste, ketchup, barbeque sauce, salsa, spaghetti sauce and more.

Bersey says he grows whatever verity the manufacturer contracts for. “It’s kind of hard to grow tomatoes without a place to take them, so you have a contract first,” said Bersey. “Then we plant and 125-130 days later, they’re going to the processor. 36 hours after that, they’re in a finished box to be moved to the next person down the line.”

So they next time you enjoy that pizza, think about the Valley farmers who grow the sauce.
